Keto Beef Zucchini Enchiladas😱⁠ . .⁠ INGREDIENTS⁠ 2 tbsp. extra-virgin olive oil ⁠ 1 large onion, chopped ⁠ Kosher salt ⁠ Freshly ground black pepper ⁠ 2 cloves garlic, minced ⁠ 1 lb. organic grass-fed ground beef⁠ 2 tsp. chili powder ⁠ 1 tsp. cumin⁠ 1 1/2 c. red enchilada sauce, divided ⁠ 4 large zucchini, halved lengthwise ⁠ 1 c. shredded Monterey jack ⁠ 1 c. shredded cheddar ⁠ Sour cream, for drizzling⁠ Freshly chopped cilantro, for serving⁠ .⁠ DIRECTIONS⁠ Preheat oven to 350° and grease a 9”-x-13” baking pan with cooking spray. In a large skillet over medium heat, heat oil. Add onion and cook until soft, 5 minutes, then add garlic and cook until fragrant, 1 minute more. Add organic grass-fed ground beef and cook, breaking up meat with a wooden spoon, until no longer pink, about 6 minutes. Drain fat. ⁠ Return skillet to stove then add 1 cup enchilada sauce, chili powder, and cumin. Season with salt and pepper. Let simmer 5 minutes. ⁠ On a cutting board, use a Y-shaped vegetable peeler to make thin slices of zucchini. Lay out three slices, slightly overlapping, and place a spoonful of beef mixture on top. Roll up and transfer to baking dish. One thing I hear people say CONSTANTLY about why they haven't tried keto - "It's so restrictive, if you don't make your week's meals ahead of time you are left with no options and will have to cheat". WRONG!! 👎 Being on ANY diet goes more smoothly if you plan ahead, but there are tons of options for last-minute Keto meals! We ended up not having leftovers last night for today's lunches - @burnbraefarms to the rescue with their crustless quiches! This one has 4g net carbs and took a whopping 90 seconds to prepare.

Sometimes all you have to do is ask... this street food vendor made this hotdog, onions and bacon dish for me without the bun when I told him I wanted to order it, but didn’t want the bun and wasn’t sure how I could eat it. He even chopped it up for me so it was easy to eat. The ketchup... not that wasn’t keto unfortunately, but it sure was a delicious treat!

Feeling Keto-shaky? DIZZINESS AND DROWSINESS As your body gets rid of water, it will also be eliminating minerals like potassium, magnesium, and sodium. This is definitely why I felt so crappy when I woke up today. Any change in nutrition can make you feel dizzy, lightheaded, and fatigued. Thankfully, this is very avoidable; all it takes is a little preparation beforehand. I tackled those symptoms right away by having a tsp of sole water 💦 into a 8oz of water. It does replenish lost minerals and makes my ions go right back up to normal 😍✅. As for the rest of the day I will Focus on eating foods that are rich in potassium, such as: * Leafy greens (aim for at least two cups each day ) * Broccoli * Dairy * Meat, poultry, and fish * Avocados It is recommended to add salt to your foods or use salty bone broth when cooking or when breaking my intermittent fast. You can also have pickles or pickle juice in you feel dizzy during the day. I also like to have some olives. Adding salt to food might be new to you since most people are used to limiting salt intake. However, when you’re eating a ketogenic diet of less than 60 carbohydrates each day, you’ll need to make up for this loss of salt. ⚠️ That being said, those who take high blood pressure medication should check with their doctors before making any changes ⚠️ Additionally, you might also want to supplement with 400 mg of magnesium. I do it every night before going to bed . Another option if you don’t feel ready for any of the above is To try an electrolyte supplement. ⚠️ Magnesium supplementation is recommended but if you have any sort of kidney problems, check with your doctor before taking any type of oral magnesium supplements ⚠️

"The hard part isn't getting your body in shape, it's getting your MIND in shape." . . 2 years ago I started my Keto journey to weight loss at 256 lbs (I'm 5'4" btw ) not knowing what to expect. I set a goal weight of 100 lbs down in 1 year but quickly put that goal in the back of my mind and took it one day at a time. "If you focus on results, you will never change. If you focus on change, you'll see results". I started learning more and actually enjoying my new "diet". I was so consistent that it became my lifestyle pretty quick. . . I've been in maintenance for a year and went from a 6 to a 4 since then in these same brand/style jeans although I'm about the same weight (about 150lbs... I was actually smaller before surgery 🤷🏼‍♀️ ). Since hitting goal weight, I've had a tummy tuck and breast implants (4 ¹/² months ago ). That's been a whole struggle on it's own dealing with swelling, and body image issues I've never had to deal with before... having big boobs ain't all that it's cut out to be. . . It's still a struggle and I still have to give myself a pep-talk to try to be a badass every day lol but (and I hate to sound cliché but I swear it's so true ) if I can do it, anyone can too. . . Whether it's Keto, Low-carb, Atkins, South Beach, Paleo, or whatever "diet" you want to try, remember to do what works for YOU! I’m an Arizona mom, married to my best friend, working a 9-5 during the week, hiking on the weekends and sharing my journey of self-love and weight loss as often as I can. I’m not a coach or a nutritionist or an influencer. I’m just a woman who documented her route along this journey to hopefully make it a little easier for others to navigate. I credit my 145lb weight loss to keto. It has changed my life in so many ways, but I think any way of eating that feels good and fits into your lifestyle is where you’ll find success. I’m asked often about loose skin. I do have it, although it isn’t as much as I expected. If I could go back and start brand new I never would have treated my body so poorly, but I can’t do that and I’m done wasting any more of my life not being content in my own skin. So, instead of focusing my energy on wishing things were different, I’m trying to love my body exactly as it is. I love to hike and will properly spam your feed with pictures and videos of the Arizona desert as soon as the temps cool down. Besides hiking, I ride an exercise bike at home and have a routine of nightly crunches. I believe consistency will always outweigh intensity and I also just really hate working out 🤷🏻‍♀️ My advice is based on my own experiences. When I share it I’m hopeful you’ll take what you need and leave what you don’t. And that you’ll understand that our unique journeys will never mirror each other’s. But, I’m also hopeful you’ll identify with me. That something in my story will resonate deeply enough that the belief you have in me... you’ll find in yourself too. - Keto Mushroom Zucchini Lasagna Rolls . 😍😍 . Ingredients: 4 large zucchini thinly sliced lengthwise (I used a mandoline ) 1 Tbsp olive oil for brushing + 1 additional Tablespoon for sauteing 1 small sweet yellow onion, finely diced 2 fresh garlic cloves, minced 8 oz fresh mushrooms, chopped well 1 tsp dry Italian seasoning 16 ounces high quality marinara sauce sea salt and fresh ground pepper, to taste 1/3 cup organic ricotta 1 free range egg 1/4 cup freshly grated Parmesan cheese a handful or fresh parsley, finely chopped 1/2 cup shredded mozzarella cheese . Instructions: Preheat your oven to 375 degrees f. and line a baking tray with parchment paper. Lay out the zucchini strips on a large cutting board, lightly sprinkle with sea salt and pepper and very lightly brush with 1 Tablespoon of oil. Bake strips in your preheated oven for 10-12 minutes, or until slightly tender and easy to roll. Allow them to cool until ready to handle. Meanwhile, add remaining olive oil in a skillet over medium-high heat. Add minced garlic and cook for 1 minute, until fragrant. Add in the onions, mushrooms, Italian seasonings and cook for 4-5 minutes. Stir in 3/4 of the marinara sauce and simmer your mushroom sauce for about 4 minutes, or until slightly reduced. In a medium bowl add ricotta, parmesan cheese, the egg and a tiny pinch of sea salt + pepper, and fresh chopped parsley. Stir well to combine everything. Use a 9×13″ casserole dish or an ovenproof cast iron skillet and spread remaining marinara sauce on the bottom. To assemble the zucchini rolls, lay out one zucchini slice on a cutting board. Keto Bacon, Avocado,Egg & Cheese bun-less burgers 😍🍔 Ingredients 2 eggs 2 tbsp. water 1/2 avocado, lightly mashed 2 slices cooked bacon 1/4 c. shredded Cheddar cheese Instructions In a medium nonstick pan, place two mason jar lids (centers removed ). Spray the entire pan with cooking spray and heat over medium heat. Crack eggs into the centers of the lids and lightly whisk with a fork to break up yolk. Pour water around the lids and cover the pan. Cook, letting the eggs steam, until the whites are cooked through, about 3 minutes. Remove lid and top one eggs with cheddar. Cook until the cheese is slightly melty, about 1 minute more. Invert the egg bun without the cheese onto the plate. Top with mashed avocado and cooked bacon. Top with the cheesy egg bun, cheese side-down. 🍗🍗Crispy skinned chicken breast topped with a creamy spinach and sundried tomato sauce, broccolini and roasted cauliflower • To make this scrumptious meal start by heating a frying pan with a little olive oil and fry a chicken breast skin down until crispy, flip chicken breast over and cook for another 2-3mins. • Place in a baking dish and into a preheated oven at 200C. • While chicken is cooking blanch some cauliflower florets and broccolini until just tender, drain. • In the same pan that you cooked the chicken sauté one rasher of bacon, diced, and toss through the cauliflower. • Add to the baking dish along with the chicken. Season with salt and pepper. • Bake until chicken is cooked through and cauliflower is crispy approx 10-15mins depending on the thickness of chicken. . Meanwhile, sauté a handful of baby spinach and 3 sliced sundried tomatoes in a little olive oil, add some pouring cream and season with a sprinkle of powdered garlic and onion. • Simmer until sauce starts to thicken • Sprinkle in grated Parmesan cheese and season to taste. • When chicken is cooked through remove from oven and cover lightly with foil and allow to rest for 5 mins. • While chicken is resting heat some butter and toss through the broccolini. • Serve your chicken topped with sauce, broccolini and cauliflower on the side. Introducing @beccas_battle : How did I get started? I started out keeping it very simple- cut out sugar, sodas (even diet ), breads, chips, rice and pastas. I stuck to simple recipes and made sure I had food prepped and ready to go so I didn’t go scavenging for food. I took baby steps guys. I didn’t dive right into Keto because quite honestly I didn’t understand everything behind it so I needed to research more on it. I didn’t start out fasting🤷🏻♀️ I let my body go into it naturally. My point: how do you start losing weight?- you just start taking baby steps to your goal. Don’t wait until you have all the answers on what you’re suppose to do for this journey, you can figure all that out along the way. Non of us knew everything we know now before we started. Every person you follow for inspiration started at square one and were just as lost as you. The thing we all have in common is we just started one day and didn’t quit. We didn’t know everything about Keto or whatever way of eating or exercise program got us to our goals. We learned it along the way. Don’t think you need to know it all to get to the goal. Just start. Take it one day at a time and figure out the small stuff along the way. ➡️Cucumber, Tomato, And Avocado Salad 🥗 ▶️Ingredients (for 2 servings ) 1 english cucumber, diced 4 roma tomatoes, diced 3 ripe avocados, diced ½ red onion, diced ¼ cup fresh cilantro, chopped (10 g ) 1 lemon, juiced salt, to taste pepper, to taste 2 tablespoons extra virgin olive oil ▶️Preparation Slice then dice cucumber. Slice then dice tomatoes. Slice avocado and carefully remove stone. Scoop out inside and dice. Peel onion and remove tops. Then slice. Via https://therecipecritic.com/creamy-parmesan-garlic-mushroom-chicken/ - INGREDIENTS 4 boneless, skinless chicken breasts, thinly sliced 2 Tablespoons Olive oil Salt Pepper 8 ounces sliced mushrooms Creamy Parmesan Garlic Sauce: ¼ cup butter 2 garlic cloves, minced 1 tablespoon Almond flour ½ cup chicken broth 1 cup heavy cream or half and half ½ cup grated parmesan cheese ½ teaspoon garlic powder ¼ teaspoon pepper ½ teaspoon salt 1 cup spinach, chopped - INSTRUCTIONS In a large skillet add olive oil and cook the chicken on medium high heat for 3-5 minutes on each side or until brown on each side and cooked until no longer pink in center. Remove chicken and set aside on a plate. Add the sliced mushrooms and cook for a few minutes until tender. Remove and set aside. To make the sauce add the butter and melt. Add garlic and cook until tender. Whisk in the flour until it thickens. Whisk in chicken broth, heavy cream, parmesan cheese, garlic powder, pepper and salt. Add the spinach and let simmer until it starts to thicken and spinach wilts.
