I’m back on the meal prep wagon today! Ready to get my macros back in order! Grilled Chicken Margherita 🍅 Ingredients 1 1/2 pounds boneless skinless chicken breasts, pounded to less than 1 inch thickness ~ about 4 chicken breasts* (3 Leaner ) 1/2 tsp salt (2 Condiments ) 1/2 tsp pepper (1 Condiment ) non-stick pan spray 1 tsp garlic powder (2 Condiments ) 1 tsp Italian seasoning (2 Condiments ) 4 ounces part-skim mozzarella cheese (1 Lean ) 1/4 cup basil pesto (4 Healthy Fats ) 1 cup cherry tomatoes, halved (2 Greens ) 1 tbsp fresh lemon juice (1 1/2 Condiments ) 1/2 cup packed basil leaves, very thinly sliced (1 Condiment ) Instructions 1. In a large bowl combine chicken, salt, pepper, garlic power, and Italian seasonings. Toss to combine. 2. Spray grill with non-stick cooking spray. Grill chicken over medium-high heat for about 6-8 minutes on each side until cooked through. Top each chicken breast with 1 oz of or 1/4 cup mozzarella cheese and cook another minute or so until melted. 3. Toss tomatoes, lemon juice, and basil together. Top each chicken breast with 1 tbsp pesto and 1/4 cup tomato mixture. Serve immediately. Today i feel very proud of myself. Yesterday was my first day in gym, i did stair machine for only 7min and only 18 floors in total. I was extremely exhausted, couldn't catch my breathe and today when i woke up at 4am i get goal to atleast do 40 floors but in reality i did 49 floors and i feel sooooo proud. 📷repost @tiny_farmstead ・・・ It seems like everyone else is already a month into their spring seeds while I haven’t even started 😳 I’m not too worried about it as I suspect we’ll have a late start to spring this year. I don’t have a tunnel or green house so if I start too early, my seedlings are ready to be planted out too early and they struggle with being in small pots and not enough direct light indoors. We get quite a few frosts so I need to be careful with how soon I plant outdoors 😊 I’m going to start with some of the peppers and perhaps a few of the patio tomatos first. Banana and Dulce Espana peppers are always a firm favourite, and I’m looking forward to trying Shishito’s this year. I wasn’t a huge of the candy cane’s I grew last year, although they were a really fun colour. Any suggestions for other varieties I should try?
