SHRIMP AVOCADO SALAD By @eatwell101 ~ 8 oz (225g ) raw shrimp, peeled and deveined 1 large avocado, diced 1 handful cherry tomatoes, diced 1/2 red onion, minced Freshly chopped cilantro (or parsley ) 2 tablespoons salted butter, melted 1 tablespoon lemon juice 1 tablespoon olive oil Salt and fresh cracked pepper Toss shrimp with melted butter in a bowl until well-coated. Heat a skillet over medium-high heat. Add shrimp to the skillet in a single layer, searing for a minute or until it starts to become pink around the edges, then flip and cook until shrimp are cooked through, less than a minute. Transfer shrimp to a shallow plate and allow to cool while you prepare the other ingredients. Add all other ingredients (avocado, tomato, red onion, and cilantro ) to a large mixing bowl. drizzle with olive oil and lime juice and toss to mix everything together. Add shrimp and give a quick stir to mix together. Season with more salt and pepper, to taste. Enjoy! MEAL PREP PALEO CHICKEN BURRITO BOWLS By @eatthegains ~ 3¾ cups shredded chicken (600 grams ) 5 bell peppers, sliced (800 grams ) 1 large onion, sliced (300 grams ) 2 cups mushrooms, sliced (13 mushrooms/250 grams ) 1 jalapeno, sliced 2 teaspoons taco seasoning 2½ tablespoons avocado oil, divided 2½ cups riced cauliflower 2 teaspoon garlic powder ½ cup packed cilantro, roughly chopped 2 tablespoons lime juice, divided 1 large head romaine, chopped (225 grams ) 2 large tomatoes, diced (225 grams ) 2 small avocados, deseeded (200 grams ) pinch of red pepper flakes salt and pepper, to taste lime wedges and chopped cilantro, for serving Make the fajita veggies. Preheat oven to 375 degrees Fahrenheit and line 2 baking sheets with parchment paper. Add sliced peppers, onion, and mushrooms in a large bowl. Add 1½ tablespoons avocado oil and taco seasoning and mix until veggies are coated. Spread out on baking sheet and bake for 30-35 minutes until soft. While veggies bake, make cauliflower rice. In a large nonstick pan over medium heat, add 1 tablespoon avocado oil and let it get hot, about 30 seconds. Add rice and garlic powder and cook for 7-10 minutes until soft and cooked through. Stir in 1 tablespoon lime juice and chopped cilantro. Make guacamole. In a small bowl add avocados, 1 tablespoon lime juice, red pepper flakes, and salt and pepper. Mash until combined.* Assemble bowls. Divided lettuce, diced tomatoes, fajita veggies, and cauliflower rice between 5 meal prep containers. Top with ¾ cup shredded chicken. Serve with guacamole, cilantro, and a lime wedge. Can keep in the fridge for up to a week. I feel like vegetable noodles are taking over the world. Every time I go to the store, I see a new vegetable being turned into a noodle! I am so down for this because I’m always looking for ways to sneak in veggies🥒 ⠀ 🤷🏻‍♀️When should you choose these “noodles”?🤷🏻‍♀️ Carrot noodles are a great option for someone who is: 🌱 trying to cut calories 🌱 decrease carbohydrates 🌱 trying to consume more vegetables! ⠀ That doesn’t mean that whole wheat noodles aren’t healthy. They are higher in fiber and protein when compared to vegetable noodles. Basically it just depends on what you feel like and what your health goals are because both are healthy options. Snickers Bites 🥜🍫 Do you like the choc peanut combo??? 🥜 Making Cheesecakes in mini size, has been the answer to all of my treat problems. They’re rich enough that you get plenty to enjoy, but small enough that they don’t blow a whole day of calories in one treat ❤️ Win Win I say. I keep a regular stash rotating through my freezer for when treat time strikes 🍫 Snickers Bites (Makes 12 mini ) Base 1/2 cup almonds 1 Tbsp crushed peanuts 1 Tbsp cacao powder 1/4 cup dates chopped (soaked in boiling water for 5 mins then drained ) Blend almonds, peanuts, cacao until a meal is formed Add the drained dates and pulse until crumbly Press into he base of 12 mini cheesecake moulds Filling 3/4 cup dates chopped 1/8 cup Tahini 2 tsp granulated stevia (or natural sweetener of choice ) 1/8 cup coconut oil 2 Tbsp Peanut Coconut Spread (or peanut butter ) 3 Tbsp almond milk unsweetened vanilla 1/8 cup crushed peanuts Blend all ingredients except peanuts until smooth in @vitamix_aunz Stir through peanuts Spoon on top of bases Place in the freezer overnight to set Icing Beat peanut butter with icing sugar and a little almond milk to consistency Enjoy! . . . . . . . #rawdessert #vegandessert #foods4thought #beautifulcuisines #onthetable #heresmyfood #foodinspo #cheesecake #vegan #whatveganseat #feedfeed #foodandwine #gloobyfood #foodie #chocolate #buzzfeedfood #huffposttaste #inthekitchen #vegansofig #veganfoodshare #veganism #rawvegan #foodphotography #vcsofood #eatclean #f52grams #veganrecipes @food52 @thefeedfeed #veganinspo @bestofvegan #plantbased #yum Follow @healthyeating_jo
